Great for a weekday treat, during the holidays or on March 14 (3.14, Pi Day), the recipe below is low in sugar and therefore low in guilt! Paired with creamy vanilla ice cream and the option of graham cracker crumbles, this simple slow-cooked treat will be a winner on your dinner table.
The recipe utilizes the natural sweetness of the apples along with apple juice and a little brown sugar. Vanilla extract and fall spices add that flavor that is so familiar with apple pie. The most time-consuming part of this recipe will probably be taking the core out of the apple. If you don't own an apple corer, you can slice around the core. The ring shape is just a suggestion. No matter how you cut them, they will still be delicious! Apple juice and butter add a bit of moisture and flavor that are the key to cooking the apple pieces into sweet tender morsels of deliciousness. Now you're ready for this easy-as-pie apple dessert.

4 Red Delicious apples, cores cut out, cut into ¼-inch rings
4 Granny Smith apples, cores cut out, cut into ¼-inch rings
1 cup apple juice
¼ teaspoon vanilla extract
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 pint vanilla ice cream
Layer apple rings in a 6-quart slow cooker. Add apple juice, vanilla extract and butter.
In a small mixing bowl, combine sugar and spices. Sprinkle on top of apples.
Cover and cook on high for 2 hours.
Serve with vanilla ice cream.
Pro tip: To add a tasty crunch after cooking, crumble up cinnamon graham crackers and sprinkle on top!
